Almond Flour Bars

These gluten-free bars taste like Almond Joy bars but with way healthier ingredients.  They stay moist and delicious when kept in an airtight container.


Cooking Time

17-20 minutes

Yields

16 bars( or more if you cut them smaller)

Ingredients

2 ½ cups blanched almond flour (almond meal will work)

1/2 tsp sea salt

1/2 tsp baking soda

1/2-cup coconut oil

½ cup pure maple syrup

1 T. vanilla extract 

1/2 c.  Your choice of carob chips or dark chocolate chips (mini-chips work well)

Directions

Melt the coconut oil in the microwave on medium power, then add the maple syrup and vanilla.

Put the dry ingredients except the nut/chocolate chips in your electric mixer and stir.  Add the wet ingredients, then the chocolate chips. Mix well.  Press into an 8x8" pan.  Bake 350 17-20minutes.  Check at 17 minutes.

Cut when cool.
