Amaranth Date Bread

This bread is so filling that one piece for breakfast with perhaps a piece of fruit will hold off snacking throughout the morning and leave you ready for a healthy lunch.  It is full of healthy whole foods!

Ingredients

1 c. chopped, pitted dates

½ cup amaranth

1 c. boiling water

2 eggs beaten (or can use ½ c. egg substitute)

½ c. honey

6 T. Organic butter or Earth Balance Sticks

1 tsp vanilla

1/4 cup unsweetened applesauce

2 c. Whole-wheat flour

2 tsp. baking powder

1 c. chopped pecans

Directions

Preheat the oven to 350.  Soak the dates and amaranth in boiling water for 15 minutes.  Beat eggs well and add honey and melted butter. Beat again. Stir in all remaining ingredients, including the amaranth mixture with the liquid.  Mix well.  Pour into a sprayed loaf pan and bake for 50-55 minutes.  Cool 15 minutes in pan, then remove to a wire rack to cool completely. 

Notes

Slice into individual slices, wrap in Saran or put in Ziplocs and freeze. You’ll be ready for on the go snacks and whole-food nutrition!
