Asian-Style Breakfast Scramble

Slice and rinse the baby bok choy ahead of time to make sure you have remonved the dirt from the inner layers of the vegetable. 

You can prepare the bok choy, and green onion ahead of time and put in a Ziploc for a quick morning preparation.  It's all about being prepared!!

Ingredients

Sauté 1 head of baby bok choy, cleaned and sliced, and 2 green onions, sliced, in 1-2t sesame oil until slightly softened. Add 1 egg plus 1 egg white (scrambled), ½ cup cooked brown rice(leftovers), and ½ tsp low-sodium tamari. Stir until eggs are cooked. Options:  add some finely chopped fresh ginger or garlic to the sesame oil.  Optional: Sprinkle the scramble with 1/4 tsp turmeric.
