To increase their flavor, toast the sesame seeds in a dry skillet over low heat until light brown, about 5 mintues.
1T. toasted sesame oil
1small yellow onion sliced into strips
4heads baby bok choy, chopped
6 fresh shiitake mushrooms
1T. tamari-light soy sauce
Heat oil in a medium sauté pan over medium heat. Add onions, reduce heat slightly and cook 5 minutes stirring occasionally. Add shiitakes, bok choy, mirin and tamari. Cover and cook for 3 minutes.
Immediately remove stir-fry to a plate.
Sprinkle with sesame seeds, and serve.
