Baby Bok Choy and Shiitake Stir-Fry

Make sure to clean the bok choy after you slice it to get the dirt that hides between the layers out.  I like to use a salad spinner to rinse it then spin it dry before I saute it. 

Cooking Time

10 minutes




1T. toasted sesame oil

1 small yellow onion sliced into strips

4 heads baby bok choy, chopped

6 fresh shiitake mushrooms


1T. tamari-light soy sauce

Sesame Seeds


  Heat oil in a medium sauté pan over mediumheat.  Add onions, reduce heat slightly and cook 5 minutes stirring occasionally.  Add shiitakes, bok choy, mirin and tamari. Cover and cookfor 3 minutes. 

Immediately remove stir-fry to a plate. Sprinkle with sesame seeds, and serve.


This is a simply preparation. Don't overcook it- it's suppose to be crunchy!
