Baked Oatmeal

You can prepare ahead of time and reheat.  Don't settle for boxed cereal when you can eat this kind of breakfast!!

Cooking Time

45 minutes




1 ½ cups milk (organic dairy or non-dairy such as soy or almond)

1-cup water

3 large eggs

2T. real maple syrup or raw honey

¼ cup butter melted (or you can substitute Earth Balance)

1 tsp vanilla

2 cups rolled oats

½ tsp cinnamon

¼ tsp nutmeg

¼ tsp ground cloves

¼ tsp salt

½ cup dried fruit of your choice (currants, raisins, cranberries, cherries etc)

½ cup chopped nuts of your choice (recommend pecans or walnuts)


Combine the milk, water, eggs, maple syrup, melted butter, and vanilla and mix well.  Stir the oatmeal and spices into the liquid ingredients.  Stir in the dried fruits.  Pour into a greased 9x9” pan.  Sprinkle the nuts over the surface.  Bake at 350 until firm, about 45 minutes. 

Serve with additional milk, or a dollop of yogurt and berries on top! 


This is a great dish for a weekend with house guests or for you and your family as it reheats beautifully for a quick weekday breakfast that sustains you throughout the morning.  Enjoy!
