This is super easy and tasty. It smells wonderful when it's baking which stimulates the appetite.
4 or more servings depending on serving size
1 tsp. oregano
½ tsp light salt
¼ tsp paprika
½ tsp garlic powder
4 boneless, skinless chicken breast
1 c. low sodium chicken broth
1 package mushrooms, sliced and sautéed in a little olive oil
1 oz Parmesan cheese (or grated Swiss cheese)
Preheat oven to 350.
Combine first 4 ingredients. Place chicken in a shallow, olive oiled baking dish. Sprinkle the seasoning mix over the top. Bake for 20 minutes. Add chicken broth. Bake another 15 minutes.Top with sautéed mushrooms and cheese and bake another 10 minutes. Can place under the broiler for a few minutes to get crispy if desired.
