I love to sauté greens then serve a piece of fish/ chicken or tofu with them. Greens are very alkalizing and proteins are acidic so it aids in balanced nutrition.
1 large bunch kale
1T. safflower oil
1tsp sesame oil
2 tsp. toasted sesame seeds (method below)
1T. tamari low-sodium
¼ cup water
Heat both oils in a large deep sauté pan over medium heat. Add greens and toss with a tongs until kale is covered with the oil and heat through (3-5 minutes). Add ¼ cup water. Cover the pan and reduce to simmer. Cook for 5 minutes. Check the greens partway through to cooking time to be sure they have not boiled dry. Add 2 T. water if they are dry. Cook 3 minutes more, if more water was added.
Add the tamari and sesame seeds.
To toast the sesame seeds, heat a small sauté pan over medium heat. Add sesame seeds. Stir or toss until toasted. Do not leave unattended. They will brown slightly and become fragrant. Remove from heat immediately.
