Brown Rice Crispy Treats

There tasty treats remind me of a rice crispy treat but with nutritional benefits.  The cereal is whole grain, the sweetener is natural as is the peanut butter, nuts add a healthy crunch and has a hint of anti-inflammatory cinnamon.

Enjoy!  Just one can be very satisfying!

Yields

about 18 2" balls

Ingredients

½ cup natural peanut butter (no trans fats)*

½ cup brown rice syrup

½ cup chopped nuts

1 tsp vanilla

1/4 tsp cinnamon

2 cups crispy brown rice cereal

Optional: ½ cup dark chocolate chips melted in microwave on 50% power

*I like Earth Balance with flax

Ina large bowl, mix together all of the ingredients.  Lightly grease your hands and using a tablespoon and yourfingers, form the mixture into 2 -inch balls. Place them on a piece of waxedpaper. If desired, drizzle with melted dark chocolate.  Works well if you put the meltedchocolate in a small Ziploc bag and snip off the corner.  Squeeze the chocolate out from thecorner of the bag onto the balls.  Place on a dish or platter covered with wax paper orparchment paper, or put into small paper muffin cups.
