Curried Chick Pea Salad

Look for canned beans with BPA-free linings.  BPA is a chemical used to line cans in food manufacturing, but has been shown to be a significant hormone disruptor.  Salt-free beans are a plus as well!

Cooking Time





1-15-oz can garbanzo beans, BPA free can, no salt added, drained

2T.finely chopped onion

¼ cup finely chopped celery

1T. chopped cilantro

½ tsp sweet curry powder

Dash of cayenne

2T. Veganaise (or a healthy mayo like Spectrum)

1-2T. non-fat Greek yogurt, to your preference

Salt (or Herbamare) and pepper to taste


In Cuisinart, pulse chickpeas until roughly chopped

Place in a medium bowl and add remainding ingredients.  Mix lightly. Chill for an hour for melding of flavors. 


This is a wonderful plant-based sandwich salad for meatless Mondays and any time you need a quick delicious sandwich as an alternative to lunchmeat.
