Prepare a couple hours ahead of time so the flavors have time to meld. The flavors in this dip are sublime!!
4 tablespoons plain yogurt
2 tablespoons chopped fresh mint
2 tablespoons lemon juice
2 small cloves garlic, minced
1-teaspoon ground coriander
1-teaspoon ground cumin
½ teaspoon salt
1-2 tablespoons olive oil
Whisk ingredients together. Refrigerate for a couple of hours so the flavors blend.
Serve with a variety of grilled vegetables.
