It takes a few minutes so chop the veggies so enjoy it and let the chopping action relax you. It's all part of nurturing your health and your body.
4-5 cups of the following veggies:
Baby carrots (cut in half), sugar snap peas, onion (large dice), baby bok choy (sliced and rinsed thoroughly in a colander), and broccoli florets.
1” piece of fresh ginger peeled and minced
2T. toasted sesame seeds
1-2T. peanut oil
2T. mirin wine (or dry sherry)
2T. Tamari low sodium (soy sauce)
1t. Kuzu root mixed with 2 t. cold water
Heat a wok until hot over medium heat. Add sesame seeds and toast until light brown tossing lightly. Remove to a small bowl or plate. Then add 2 T. peanut oil to the wok. Let heat for a minute then add minced ginger. Stir-fry a couple of minutes. Turn up heat slightly and add prepared veggies.
Stir-fry about 5 minutes until slightly tender (you want them to be crisp/tender). Combine the mirin wine with the Tamari. With a whisk, add in Kuzu root mixture. Stir until thickened. Add toasted sesame seeds. Enjoy!
