Every Day Salad Dressing

I have yet to find a store bought salad dressing that I think tastes good and is good for you, so I make my own.  This one was in Clean Eating Magazine this month (May/June 2017) and it’s really delicious.   Double it so you have dressing throughout the week.


about 1 cup of dressing



1 small shallot, minced

¾ cup extra virgin olive oil

2 T. apple cider or red wine vinegar

2T. rice vinegar

2 tsp raw honey or pure maple syrup

1 tsp Dijon mustard

¾ tsp sea salt

Fresh ground pepper to taste



In a small bowl or glass jar with a lid, whisk or shake all ingredients until emulsified.  Cover and keep in refrigerator for 5-7days.
