Garden Tomato and Cucumber Salad

Make this salad in the summertime when cucumbers and tomatoes are in peak season.  It will taste best then.

Yields

4-6

Ingredients

3 medium cucumbers, ¾” dice

1t. kosher salt

1 medium sweet yellow onion, ¼” dice

4-5 Roma tomatoes, seeded and ¾ “ dice

1 bunch of Italian parsley, leaves only, chopped

1T. fresh dill, chopped

Dressing:

¼ cup red wine vinegar

3T. extra virgin olive oil

1t. freshly ground black pepper

1t. kosher salt

Directions

Mix cucumbers and 1 t. kosher salt and let rest for 1 hour.  Rinse and pat dry.  Then toss with onions, tomatoes ,parsley and dill.  Whisk together dressing ingredients and toss with salad. Refrigerate for 3-4 hours before serving to let the flavors meld.  Taste to adjust the seasoning.

Notes

  Enjoy the bounty of the garden!!  For an added treat, top each serving of the salad with a sprinkle of crumbled feta cheese!
