Garlic Spinach

3-4 servings


1 large bunch or bag of fresh spinach (wash, spin dry)

1-2T. extra virgin olive oil

2 garlic cloves, minced or pressed

½ shallot diced

Kosher salt and freshly ground pepper

Optional:  Fresh lemon juice and grated Parmesan cheese


Chop spinach slightly but do not dice. 

Heat a heavy bottomed sauté pan over medium high heat.

Add 1-2 T. extra virgin olive oil.  Add garlic and sauté a minute then add shallots.  Saute a minute or two more then add spinach.  Sauté until limp (a couple of minutes).  Season with salt and pepper.  Enjoy.  Can add a little sprinkle of Parmesan cheese and squeeze of lemon juice to enhance flavor!


This makes a nice base for a piece of fish or chicken.  Also nice to add to some scrambled eggs.
