Grilled Radicchio with Balsamic Vinaigrette

Radicchio can be bitter when it's raw and on its own, but when lightly grilled and tamed down with the vinaigrette, it is a delicious way to enjoy this nutritious Glorious Green.

4 small to medium heads of radicchio

Extra virgin olive oil (EVOO)for grilling


1 T. balsamic vinegar

2 T. extra virgin olive oil

1 T. chopped fresh basil

½ t. Dijon mustard

 Sea or kosher salt to taste

3-4 drops hot sauce to taste(optional)


  • Remove any wilted outer leaves of the radicchio.  Slice the entire head in half lengthwise and then into quarters, keeping the base intact.
  • In a small bowl, whisk together the vinegar, oil, basil, mustard, salt, and hot sauce.  Set aside.
  • Heat the stovetop or outside grill.  Brush radicchio with EVOO and grill for 3-4 minutes per side, until base is tender when pierced with afork.
  • While radicchio is still onthe grill, brush with dressing. Serve immediately or at room temperature.
