Grilled Shrimp with Smooth Mango-Lime Vinaigrette

With the short cooking time, this is a nice dish to prepare ahead of time, then put on the grill just before you are ready to eat!

¼ cup safflower oil

1 tsp kosher salt

½ tsp granulated garlic

½ tsp freshly ground pepper

½ tsp ground cayenne pepper

32 large shrimp (1 ½ #,peeled and deveined)


½ cup roughly chopped ripe mango (about ½ mango-I prefer Atulfo mangos)

¼  cup safflower oil

¼ fresh cilantro, leaves only

1 whole scallion, root end trimmed

1 T fresh lime juice

1 T rice vinegar

1/2 “ section of fresh ginger, peeled and chopped

½ tsp kosher salt

¼ tsp freshly ground pepper


  • To make the marinade:  In a large bowl, mix the marinade ingredients.  Add the shrimp and toss to coat thoroughly.  Cover and refrigerate for up to 1 hour.
  • To make the vinaigrette:  In a blender, combine the vinaigrette ingredients.  Process for about 1minute or until the texture is smooth and emulsified.
  • Remove the shrimp from the bowl and discard the marinade. Grill over Direct High Heat (HHH) until the shrimp are firm to the touch and have turned pink, 3-5 minutes, turning once.  Serve warm shrimp with the vinaigrette.
