If you prepare this ahead of time, be sure to cover it with Saran wrap to prevent discoloration of the avodaco.  The lime juice in the recipe helps to prevent oxidation.  


3 ripe avocados

1clove garlic, minced or pressed

½ small onion, finely minced

1Roma tomato or other small tomato, seeded, small dice

2t. olive oil

1T. fresh cilantro, chopped

Sea salt to taste

Juice of 1 fresh lime (about 2 T.)


Split the avocados in half, discard pit, and scoop the flesh into a medium bowl.  Mash with a fork.  Add the other ingredients.  Mix and enjoy with tortilla chips o reven better, jicama*

*Peel jicama and cut into strips about 3-4 “ long.  Squeeze the juice of a lime over them and sprinkle with sea salt.  Use them to dip into the guacamole for a delicious and healthy alternative.
