Kale with Canadian Bacon and Cannellini Beans

This makes a quick, healthy and delicious meal.  The Canadian bacon adds an irresistible smoky flavor that works well with the white beans and kale.

4 servings


1 large or 2 small bunches of kale, washed, stemmed and torn into small pieces

4 oz (about 4-5 thin slices) nitrate-free Canadian bacon, chopped

1-15-oz can BPA/ salt-free cannellini beans, drain

1 medium onion, chopped

1T. olive oil

½ cup low sodium chicken broth

Sea salt or Herbamare and fresh ground pepper to taste


Heat a medium non-stick skillet over medium heat.  Sauté the chopped Canadian bacon until browned, crisp.  Set aside

In a large skillet, heat the olive oil over medium heat.  Add chopped onion and sauté until soft and light brown,about 5-7 minutes.  Add kale,cannellini beans, and chicken broth. Stir to combine then cover and cook about 4 minutes until kale is tender. You may need to turn down heat to medium low.  Season with Herbamare or sea salt and fresh ground pepper.  Top with browned bacon bits.    Enjoy!
