This crisp is best if you mix the apples. In the fall, I like to use Courtlands, Macintosh, and Zestars, but in the winter, I'll use Granny Smith's which are readily available.
6 medium tart apples sliced and peeled (Courtland, Macintosh, Granny Smith- a mixture is best!)
1-2T. real maple syrup
½ tsp cinnamon
¾ cup firmly packed organic (if possible) brown sugar
½ cup whole-wheat pastry flour
½ cup thick oats
¾ tsp cinnamon
½ tsp nutmeg
1/3 cup softened organic butter (can substitute Earth Balance sticks)
Pinch of salt
Preheat oven to 375
Spray an 8x8” square baking pan
Place the apple slices in the pan. Drizzle 1-2 T. real maple syrup over apples and sprinkle with ½ tsp cinnamon. Mix topping ingredients together with a pastry blender or fork until crumbly. Sprinkle over the apples. Bake for 30 minutes or until golden brown and bubbly.
