This salad used to be called Rick and Charlies Salad, but my daughter Meggie and I made so many changes to it that we now call it Meg and Mary's salad. Besides, we don't know who Rick and Charlie are. This is a crowd pleaser!
3 heads Romaine lettuce,clean, chop, spin-dry and chill
¾ cup quartered grape tomatoes
½ cup chopped purple cabbage
1 jar artichoke hearts, drained, chopped
½ cup red onion, chopped
¼ cup chopped Italian parsley
½ cup Parmigianino reggiano cheese, coarsely grated in Cuisinart
Salt and fresh ground pepper
Chopped fresh basil
Kalamata olives, quartered
½ cup salad oil- can use some EVOO if you like (we like 1/4c. EVOO and 1/4c. Safflower oil)
1/3 apple cider vinegar
Toss together salad ingredients, except salt and pepper, then add dressing a little at a time. You may not need it all. Add salt and pepper to taste.(The salt and pepper are important so don’t omit).
