No Bake Energy Bites

Prep Notes

*To toast coconut, put in an 8x8 cake pan and toast in a 325 oven until lightly browned- about 3-5 minutes.  I usually shake the pan at 3 minutes and let it go another 1-2 minutes watching carefully to prevent burning.  Cool before adding to recipe. 

Cooking Time

3-5 minutes to toast the coconut


20-25 1" balls


1cup dry oatmeal (old–fashioned oats)

2/3 cup toasted unsweetened coconut flakes*

½ cup natural peanut butter

½ cup ground flax seed

½ cup mini chocolate chips or carob chips

1/3 cup raw honey or agave nectar

1 T.chia seeds (optional)

1tsp. vanilla extract


  • Stir all ingredients together in a medium sized bowl until thoroughly mixed.  Cover and chill in the refrigerator for 30-60 minutes.
  • Once chilled, roll into small balls (about 1” in diameter). Store in an airtight container in the refrigerator for up to a week. Separate layers with waxed paper. 
  • Makes 20-25 balls. 


These are great for kids snacks.  I love to eat one before a morning workout- the perfect quick energy snack made from whole food ingredients.
