Pumpkin Spiced Nuts

Prep Notes

Make these up ahead of time and store in an airtight container for the holidays.  They're super tasty and make a great gift as well in a nice tin or mason jar. 

Cooking Time

1 hour


1/4 cup evaporated cane juice

2 heaping teaspoons pumpkin pie spice (I usedFrontier brand, which has cinnamon, ginger, cloves, nutmeg)

1/8 tsp salt

1 egg white

1-tablespoon pure vanilla extract

3 cups pecan halves/or walnuts


1.Mix sugar, pumpkin pie spice and salt in asmall bowl. Beat egg white and vanilla in a large bowl until foamy.

Add pecan halves: toss to coat well. Add spice mixture, toss to coat pecans evenly.

2.Spread pecans in a single layer on lightly greased baking sheet. (or parchment paper)

3.Bake in preheated 250F oven for 1 hour, stirring once. Cool slightly and break apart.


Cool completely. Store in airtight container( up to 2 weeks).
