Raw Cocoa Cacao Bars

A delicious whole food treat that will satisfy your chocolate cravings and nourish your body as well!

1/2 cup raw unsalted cashers( or roasted, unsalted)

1/2 cup brazil nuts

3/4 cup shredded or shaved unsweetened coconut

3/4 cup pitted dates

1 1/2 T. raw cacao powder

1T. real maple syrup

1 T. vanilla extreact

1/4 tsp sea salt( iodized if possible)

1 T. hemp hearts


  1. If you have raw cashews, preheat oven to 350
  2. While oven is preheating, combine all of the other ingredients except the hemp hearts in a Cusinart( if using roasted cashews, skip this step).
  3. Bake the cashews for about 5-7 minutes just until they turn a light golden color.
  4. Let the cashews cool for a few minutes.  Add to the rest of the ingredients in the Cuisinart
  5. Blend it all together
  6. Line an 8x8" pan with wax or parchment paper so there's enough extra to cover the top of the pan when folded back over.
  7. Transfer the blended mixture into the lined pan, and flatten it to distribute evenly.  It should stick together but still be a bit crumbly.
  8. Sprinkle the hemp hearts over the top, fold the top of the wax paper over the mixture and press firmly with your hands to press the hemp hearts in. 
  9. Put the pan in the frig for about an hour or more, to harden.  Remove by grabbing the ends of the wax paper.  Cut in small squares and enjoy!


These are a great pre-exercise snack as they are loaded with carbohydrates and protein to power your muscles.  Just one or two squares is enough to get you going!
