This is in the breakfast category but can be enjoyed anytime of day. I like light suppers and this one with a piece of fruit is perfect.
1 piece of whole-grain bread, toasted
1/3 of a ripe avocado
Squeeze of fresh lemon juice
1/2 cup fresh baby spinach or arugua
1 egg, poached or fried with a little olive oil
Herbamare to season
Toast bread. Spread with ripe avocado. Sprinkle with fresh lemon juice. Spread fresh greens over toast. Top with a poached egg (done to your preference- I like it poached, 3 1/2 minutes or an easy over fried egg). Sprinkle with a little herbamare (or salt and pepper). Za'atar is another nice seasoning to try. Enjoy a healthy start to your day powered up with fiber, healthy fats, greens and protein.
