You could easily substitute green beans or sugar snap peas for the asparagus in this recipe. They are all easy and delicious!
1 T. sesame seeds
1 T. light sesame or peanut oil
2 tsp toasted sesame oil
1 lb. fresh asparagus, trimmed and cut diagonally, in 1” pieces
1 tsp rice vinegar
1-2 tsp light soy sauce or to taste (Tamari-light is nice)
In a large skillet or wok, toast the sesame seeds over low- medium heat, shaking the pan about 1 minute or until seeds are light brown and nutty smelling. Remove and set aside.
Add the oils to the pan and warm over medium heat, then add the asparagus and stir-fry for about 1-2 minutes or until asparagus begin to soften. Add the rice wine vinegar and soy sauce, and continue to stir- fry for another 1-2 minutes. Serve sprinkled with the toasted sesame seeds.
Great for a side-dish or a snack. Veggies make the best snacks if you want to be slim!
