Steve’s Spelt Wheat Buttermilk Pancakes

Prepare your inclusions first so they will be ready to add to the batter.  Suggestions are:  fresh blueberries, warm diced cinnamon apples, sliced banana, granola, and ground flax seeds.

For the warm cinnamon apples, peel, core and dice a couple of apples and put in a microwave safe bowl.  Toss with about 1/4 tsp cinnamon or apple pie spice.  Top with a microwave plate and microwave about 90 seconds.  Perfect for a spelt wheat pancake add in. 

Apple, blueberry , flax is my favorite combination.  Your family members can all her their own favorite combination.

Cooking Time

5-8 minutes

Yields

6 servings of 2 pancakes each

Ingredients

2 fresh eggs

2 T. brown sugar

1/2 tsp salt

3T-melted butter (or can use Earth Balance)

2 cups fresh buttermilk (may need to add 1 or 2T more if the batter is too thick to pour)

1 T. baking powder

1 tsp baking soda

2-cups spelt wheat flour

Directions

With an electric mixer, beat eggs until light and frothy.  Add brown sugar, salt, melted butter and buttermilk.  Mix until combined. Then, stir in flour, baking powder and baking soda. 

Preheat griddle.  Drop about 1/4-1/2 c of batter per pancake.  (At this point, we like to add any of these inclusions: fresh blueberries, thin sliced bananas, chopped peeled cinnamon apples, granola and a sprinkle of flax seed). When bubbles appear on top, flip pancakes.  Cook until firm and golden brown. 

Serve with real maple syrup and some sliced strawberries or fresh raspberries.

Notes

These are a Battista Saturday morning tradition.  We put berries in the pancakes and berries on the pancakes. 

If you have extras, save for another morning in the frig or freezer.  Separate pancakes with pieces of waxed paper to prevent sticking.
