Tangy Kohlrabi

Not sure what to do with kohlrabi?  You'll love this!  The calories are low and the flavor is big!

The prep is quick but the flavors meld if you place it in the refrigerator for 30 minutes or so before eating. It's worth the wait!

Cooking Time



4 servings


4 medium bulbs of kohlrabi

1/2 medium orange, juice only( about 1/4 cup juice)

1 medium lime

2 tsp white wine vinegar

1 T raw honey

1/4 cup chopped cilantro


1.  Cut the stems and leaves of the kohlrabi  bulb.  Using a paring knife, remove the peel.  Then cut the kohlrabi into matchsticks.  Place in a medium bowl and set aside.

2.  In a small bowl, combine remaining ingredients to make the dressing.  Whisk until well-combined. 

3.  Pour the dressing into the bowl with the kohlrabi .  Toss to combine.  Add the chopped jalapeño, if desired.  Cover and place in refrigerator for 30 mintues. 

4.  Serve chilled.
