Thai-Style Coconut Curry Halibut Packet’s

Chop and assemble all of your ingredients and then you can put together the 4 packets in a snap. 

Just use one staple on each end of the packet and watch for it when you open the packets.  You can omit, but be sure to securely seal the ends so the food steams inside the bags.  These are mighty tastey!

Ingredients

4-4oz boneless, skinless halibut fillets*

Sea salt and fresh ground pepper to taste

14 oz. light coconut milk

1 small red onion, thinly sliced

1 red bell pepper, thinly sliced into strips

8 small fingerling potatoes, scrubbed well and thinly sliced

1 zucchini, thinly sliced into rounds

½ cup lightly torn basil leaves

½ cup fresh cilantro, plus additional for garnish

1 lime, thinly sliced

1 tsp curry powder

Red pepper flakes, to taste

*  You can substitute mahi mahi or other firm white fish when halibut is not available or is too expensive. 

Directions

  1. Preheat oven to 400.  Cut 4, 15-inch squares of parchment paper; fold each piece in half into a rectangle.
  2. Season halibut with salt and pepper and place 1fillet on top of each parchment sheet. Pour half of coconut milk over top of halibut, dividing evenly.
  3. Layer red onion, bell pepper, potatoes, zucchini, basil, cilantro and lime over top of halibut, dividing evenly.  Pour remaining coconut milk over top,dividing evenly.  Sprinkle withcurry powder, pepper flakes, salt and pepper, as desired.
  4. To seal packets, fold long edges of parchment over top and crimp to seal. Fold up open ends and staple shut with one staple on each end.  Place packets on a  rimmed baking sheet and bake for 15 minutes or until halibut are opaque throughout.  Transfer packets to serving plates.  Carefully cut packets open, peel back parchment( watch for staples) and if desired, garnish with more cilantro.  Wonderful served on top of brown jasmine rice. 

Notes

These can be assembled ahead of time and then put in the oven when ready to eat.  They are a convenient way to eat healthy on weeknights especially.
