Tofu Scramble

A delicious alternative to eggs for those looking for a more plant-based diet.

Ingredients

¾ cake firm tofu, drain liquid, pat dry and crumbled. (Not extra firm)

1-cup broccoli, chopped

½ cup carrot, thinly, sliced

½ green onion, sliced

(Basically, 2 cups of vegetables of your choice)

1 T. minced garlic

1 T. minced fresh ginger

½ tsp turmeric

1 ½ T. toasted sesame oil

2 T. tamari low sodium or other low sodium soy sauce

1 T. water

In a skillet, sauté crumbled tofu and turmeric in oil for 3 minutes over medium high heat.  Add veggies, soy sauce and water.  Stir and cook for another 2-3 minutes.
