Vegetable Fried Rice

Make this with your leftover brown rice and little bits of veggies. Feel free to veer from the veggies in the recipe.  You could really add whatever you wanted to.

When someome if hungry for a snack in my family, I would offer them a bowl of this veggie fried rice.  It's a fabulous alternative to chips, crackers or cookies.

Eat real food and you will feel satisfied and avoid the never ending case of the munchies.

Cooking Time

10 minutes




1 T. peanut oil

1 medium onion, peeled and diced

2 garlic cloves, peeled andminced

2 eggs, beaten

1 large stalk broccoli, cut into small florets

1 carrot, halved and thinly sliced

¼ cup green peas (thaw iffrozen)

½ cup water chestnuts (sliced)

3-4 cups cooked long grain brown rice

1-2 T. toasted sesame oil

2 T. tamari light soy sauce

1/3-cup water

2-3 scallions minced


Heat 1 T. peanut oil in a wok or large skillet and sauté onion and garlic for 1-2 minutes.

Add eggs and mix until cooked.  Add broccoli and carrots, stir-fry for 3 minutes.  Add green peas and water chestnuts, and cooked 1-2 minutes more.  Add the cooked rice to the pan.  Season with the sesame oil and tamari, then add water.  Cover and steam for 2-3 minutes.  Garnish with scallions.
