Watermelon Arugula Salad

Packed with antioxidants from both the watermelon and the arugula, this is a super nutritious salad but low in calories! Hydrating and delicious as well!




6 cups diced seedless watermelon

½ cup red onion, thinly sliced

1 cup feta cheese, crumbled

½ cup roasted sunflower seeds (no salt added)

5-6 cups baby arugula, lightly packed

½ cup extra virgin olive oil

2T. balsamic vinegar (or could use fresh lemon juice)

1t. agave nectar or raw honey

Fresh ground pepper to taste

Few mint/or basil leaves, chopped (optional)


Toss all of the ingredients into a large bowl except for pepper, oil, vinegar, and agave nectar.  Whisk together the olive oil, vinegar and agave. Drizzle over the salad (start with a 3-4 T. b/c you may not need all of it).

Garnish with a small sprinkle of chopped mint and freshly ground pepper, if desired.
