Whole Wheat Peanut Butter Cookies

You can always take a recipe you already like, and modify it to make it healthier.  That's what I did here and the result is really nice! 

You might as well have healthy ingredients in your cookies, rather than refined white flour, too much sugar, too much saturated fat.

1 ½ cups whole -wheat pastry flour

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup creamy organic peanut butter

1/3-cupEarth Balance Vegan buttery sticks

½ cup sucanat

½ organic brown sugar, packed

1 whole egg

½ tsp vanilla


Preheat the oven to 350.  Combine the flour, baking powder, baking soda, and salt in a bowl and set aside.  In a large mixing bowl, combine the peanut butter, and Earth balance. Beat with an electric mixer until smooth.  Add in sugars, vanilla and egg and beat until combined.

Shape dough into ¾ inch balls and place on ungreased cookie sheets.  Press the balls flat with a fork, making a criss-cross pattern on top of each cookie. Bake for 10-15 minutes, or until the edges are barely browned.  Remove to a cooling rack.
