Start to do your food prep when you are in the kitchen doing dishes after dinner so you always have something delicious and nutritious to eat the next day. It's well worth the effort an the kitchen is messed up already anyways.
1 T. ghee (clarified butter)
1 T. EVOO (extra virgin olive oil)
1 large sweet onion, chopped
2 medium green zucchini, halved then sliced
2 medium yellow zucchini, halved then sliced
1 medium red bell pepper, chopped
2 cloves garlic, minced
½ tsp sea salt
½ tsp freshly ground pepper
¼- ½ tsp turmeric
Melt the ghee and olive oil in a hot cast iron other heavy skillet.
Add the onion, and cook for 5 minutes.
Add the zucchini, red bell pepper, and garlic to the pan.
Sprinkle with salt and pepper and turmeric. Let simmer for 20-30 minutes or until zucchini is soft. Don’t over cook.
Even better the next day as the flavors meld!
